Walnut Pâté

This is an easy pâté to make, very satisfying to eat and always popular at our events. It isn't our own recipe, so please see below for the acknowledgment .. it's also a link to some typically difficult-to-source ingredients.


Walnut Pâté flanked by Spicy Guacamole and Mediterranean Dolmas

Ingredients

1 stick celery

Half a red pepper

150g walnuts

Juice of half a lemon

Half a tbsp white miso

30g sundried tomatoes

2 tbsp water


Method

Chop the celery, remove the stem and seeds from the pepper. Put everything in a blender and blend to a cream. Gradually add more water if needed for the right consistency. Store in a jar in the fridge and use within 4 days.


And Finally ...

The quantities above make a good amount of pâté (at least 2 Cups); the original recipe makes double the amount which we find too much. The amounts above are enough even when we have lunch guests.
